TONI RAE'S PRETZEL JELLO SALAD

Crust


 

3 strips sugar

2 1/2 c. pretzels (coarsely crushed)
1/2 c. margarine

Mix pretzels, margerine and sugr well. Bake in 9 X 13 inch pan at 350° for 10 minutes. Cool.

Filling
 

1 (8-oz.) cream cheese
1 lg. Cool Whip

1 c. sugar



Cream the cheese. Blend in the sugar. Add the cool whip and mix well. Spread over the cooled pretzels.

Topping
 

2 (10-oz.) pkgs. frozen strawberries

2 (3-oz.) pkgs. strawberry Jello
2 c. boiling water


Dissolve the Jello in the boiling water. Add the frozen strawberries, breaking up with a fork as you stir. Chill until slightly thickened. Pour over cool whip layer.

Note: Some of her favorites. She was a cook who could make up recipes. In fact, she made a brown gravy with mushrooms that she never did share, I guess we have to hang on to something of our own.

TARA'S BIRTHDAY PENUCHE FROSTING
 

 

1 1/2 c. powdered sugar
1/4 tsp. vanilla

1/4 c. butter
1/2 c. brown sugar
2 T. milk (maybe more)


Over low heat, melt butter and add brown sugar. Cook 2 minutes, keep stirring! Add milk, cook until mixtures boils (takes a few minutes, keep stirring). Remove from heat, gradually add powdered sugar, add vanilla. Easiest way is with electric mixer to get out lumps. Hardens VERY fast, have cake ready to frost. Add small amount of milk if too hard, use hot knife to spread. Great on spice or applesauce cake.

Note: This is enough frosting for top of 9 x 13 cake, I usually double this for tube or layer cake. I made this for many, many of Tara's birthdays or just as a treat!
