    TAMI'S CRAVING -- CREAMED EGGS ON TOAST

 

1-3/4 c. milk
6 hard-boiled eggs, chopped
4 slices bread, toasted and buttered
paprika or parsley
 
3 T. butter or margarine
3 T. flour
1/2 tsp. dry mustard
1/4 tsp. salt
dash of pepper




In a heavy saucepan melt butter or margarine over medium heat. Stir in flour, dry mustard, salt, and pepper. Add milk all at once. Cook and stir till mixture is thickened and bubbly. Cook and stir 2 minutes more. Carefully stir in eggs; heat through. Serve over toast. Sprinkle with paprika or parsley. Serves... Makes 4 servings

Note: If Tami was hungry, and didn't know what she wanted, she always ended up cooking eggs. Tami craved creamed eggs while she was pregnant. In fact she even called me at work to get the recipe. I told her to call her step-dad at home and tell him to get it for her out of my recipes.

1 (8-oz.) cream cheese
1/2 bottle chili sauce
1/2 chopped onion
2 cans tiny shrimp
2 tsp. horseradish Sauce
1 c. mayonnaise

TERRI'S YUMMY SHRIMP DIP




Mix Mayo, chili sauce, horseradish, and cream cheese well. (kind of cream it) Add onion & shrimp, mix lightly Chill for a couple of hours. Dip with chips, crackers or whatever you wish. Serves: many!

STEVEN'S CHRISTMAS DANISH PUFF

Danish Puff

1 tsp. almond extract
1 c. all-purpose flour
3 eggs
confectioners sugar glaze
chopped almonds
1/2 c. butter, softened
1 c. all-purpose flour
2 T. water
1/2 c. butter
1 c. water






Preheat oven to 350°. Cut 1/2 c. butter into 1 c. flour. Sprinkle 2 T. of water over mixture; mix. Round into ball, divide in half. On ungreased baking sheet, pat each half into strip, 12 by 3 inches. Strips should be about 3 inches apart. Heat 1/2 c. butter and 1 c. water to rolling boil in a medium saucepan. Remove from heat and quickly stir in almond extract and 1 c. flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute. Remove from heat. Beat in eggs (all at once) until smooth and glossy. Divide in half and spread over each crust evenly. Bake about 60 minutes or until topping is crisp and brown. Cool. Topping will shrink and fall, forming the custardy top of this puff. Frost with confectioners sugar glaze and sprinkle generously with nuts. 10-12 servings.

Confectioners Sugar Glaze

 

Mix all ingredients until smooth and of spreading consistency.

Note: Steven used to call me every year on Christmas Eve to make sure I'd made these. He told me he wasn't coming if I didn't make them.
