Note: If Tami was hungry, and didn't know what she wanted, she always ended up cooking eggs. Tami craved creamed eggs while she was pregnant. In fact she even called me at work to get the recipe. I told her to call her step-dad at home and tell him to get it for her out of my recipes.

Danish Puff

1 tsp. almond extract
1 c. all-purpose flour
3 eggs
confectioners sugar glaze
chopped almonds
1/2 c. butter, softened
1 c. all-purpose flour
2 T. water
1/2 c. butter
1 c. water

Preheat oven to 350. Cut 1/2 c. butter into 1 c. flour. Sprinkle 2 T. of water over mixture; mix. Round into ball, divide in half. On ungreased baking sheet, pat each half into strip, 12 by 3 inches. Strips should be about 3 inches apart. Heat 1/2 c. butter and 1 c. water to rolling boil in a medium saucepan. Remove from heat and quickly stir in almond extract and 1 c. flour. Stir vigorously over low heat until mixture forms a ball, about 1 minute. Remove from heat. Beat in eggs (all at once) until smooth and glossy. Divide in half and spread over each crust evenly. Bake about 60 minutes or until topping is crisp and brown. Cool. Topping will shrink and fall, forming the custardy top of this puff. Frost with confectioners sugar glaze and sprinkle generously with nuts. 10-12 servings.

Confectioners Sugar Glaze

Mix all ingredients until smooth and of spreading consistency.

Note: Steven used to call me every year on Christmas Eve to make sure I'd made these. He told me he wasn't coming if I didn't make them.
