SUSAN'S TUNA NOODLE CASSEROLE


 

(4-oz.) medium noodles, cooked medium (not completely) and drained
3 T. finely chopped pitted black or green olives
1/2 c. fine, dry breadcrumbs, mixed with
2 T. melted butter
3 T. butter
3 T. flour
2 c. milk
3/4 c. shredded Swiss or cheddar cheese
salt
fresh ground pepper
1 (12-oz.) can white tuna, drained and
flaked




 

 

Preheat oven to 350 degrees. Butter a 2-quart casserole dish. In a heavy saucepan, over low heat, melt the butter, stir in the flour, and cook, stirring constantly, for 60 seconds. Whisk the milk and cook, stirring constantly, for 4 to 5 minutes, or until smooth and thick. Add the cheese and stir until just melted. Season with salt and pepper to taste. Remove from heat. In a large bowl, combine tuna, noodles, olives and cheese sauce. With two forks, toss together. Spoon lightly into the casserole dish. Top with buttered bread crumbs. Bake for 20-30 minutes, or until golden brown and bubbly. Serve very hot. Variation: Use a slightly larger casserole dish and add as much as 1 cup chopped cooked ham instead of tuna and/or 1/2 cup to 1 cup cooked
peas.
