SGT. PETE'S FAVORITE BAKED ZITI RECIPE


 

1 lb. mozzarella cheese, shredded
1 lb. ricotta cheese

1 lb. turkey, chopped
2 cans Italian crushed tomatoes

In a large pot, add a little oil, chopped garlic, and lots of onions. Brown the garlic, and onions slightly. Then add chopped meat, dice meat very fine and brown. Add oregano, fresh basil, garlic powder, garlic salt, and mix thoroughly while browning. When browned, add tomatoes, mix with meat and cook for about 2 hours on medium heat. Boil 2 lbs. of ziti while waiting. In a separate bowl, mix ricotta and shredded mozzarella cheese together with garlic powder. When ziti is cooked, (Pete liked it not completely cooked), drain and put into large baking pan. Take the cheese mixture and blend into ziti, and cover with the sauce. Sprinkle grated cheese on top, cover with
foil and bake for 30 minutes at 300°.

Note: This was Pete's Birthday dish each year...March 2 Hope you enjoy it!

ROBBIE'S OREGANO CHICKEN

 

2 tsp. dill weed
1 tsp. oregano
1 onion, sliced in half
salt and pepper to taste

1 whole roasting chicken
olive oil
2 cloves garlic (or more, to taste)
1 lemon, sliced in quarters, seeds removed




Slice one of the garlic cloves in half and rub all over the chicken. Cover the chicken with olive oil. Squeeze the lemon on the chicken. Crush the remaining garlic and spread over the chicken. Spread the dill weed over top of chicken. Spread the oregano generously over top of the chicken. take sliced onion and place inside the chicken. (This is for flavor only.) Add salt and pepper to taste. Cover drumsticks and wings with foil. Bake according to weight as directed on chicken package. You can also use this recipe for almost any fish - especially salmon.
