OLD FASHIONED SOFT PUMPKIN COOKIES FOR ERIC


 

1/2 c. butter (softened)
1 - 1/2 c. sugar
1 (8-oz.) can pumpkin
1 egg
1 tsp. vanilla

2 - 1/2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 -1/2 tsp. nutmeg


 

Combine flour, baking powder, baking soda, salt, cinnamon and nutmeg. In large bowl cream butter and sugar. Add pumpkin, egg and vanilla, beat until light. Add dry mix and stir well. Drop rounded tablespoon onto greased cookie sheet. Bake at 350° for 15 to 20 minutes or till lightly browned. These cookies don't spread as they bake so can be place a bit closer together than you might normally do. They puff up like tiny cakes. Cool on wire racks and frost with powdered sugar frosting. (Mix powdered sugar with just enough milk and a spot of vanilla to make smooth.)

Note: Eric loved for his mom, Bobbie, to fix pumpkin pie and cookies for him when he was a little boy.

MY MOM BETTY'S NO-COOK COOKIES





Have waxed paper rolled out and ready to drop cookies. Mix first four ingredients in sauce pan and stir until melted together. Cook to a rolling boil. Boil for one and half minutes. Remove from oven. Add next four ingredients. Stir quickly and drop by Tbsp. onto waxed paper.

Note: When as a little girl, I would ask my Mom if she would make me "My" cookies. I loved them so much & didn't realize they had a name. I still make them today for my family and my 26 yr. old daughter makes them for hers also.

1/3 c. crunchy peanut butter

1 pinch salt

2 c. sugar
3 T. cocoa
1 cube butter
1/2 c. milk
