ANTHONY'S JAMAICAN BANANAS
(A Microwave Recipe)


 

2 med. bananas, sliced lenghtwise
2 tsp. rum
demerara sugar to sprinkle

(10-oz.) butter
(10-oz.) brown sugar
1 med. orange, juice and rind

Preparation time: 5 minutes (Serves 2). Melt butter in bowl on high for 30 seconds Stir in the sugar, orange juice and rind. Add the bananas and cook on medium high for 3 minutes, turn over half way through cooking. Arrange the bananas in a warm serving dish. Stir the rum into the remaining juice, heat on high for 30 seconds. Pour over bananas sprinkle with sugar. Place the dish on high rack Grill for 4-5 minutes until the sugar has caramelized.

APRIL'S TROPICAL CHEESECAKE

1 9 inch graham cracker pie crust
2 bananas, sliced
1 (8-oz.) can crushed pineapple (drained)
1 (8-oz.) pkg. cream cheese, softened


 

1 (14-oz.) can Eagle Brand milk
1/4 c. lemon juice
1 tsp. vanilla




Line bottom of crust with sliced bananas and crushed pineapple. In small bowl, beat cream cheese until fluffy. Gradually beat in milk until smooth. Blend in lemon juice and vanilla. Pour into crust. Chill 3 hours. Serve garnished with pineapple and coconut. Serves about 4 - 6 people.

ANGEL JAY'S BOURBON AND CHOCOLATE PECAN PIE
Chocolate Chess Pie

 

2 T. bourbon
1 tsp. vanilla
1/2 c. chopped pecans (up to 2/3 cup)
1/2 c. chocolate chips
1 9-inch pie shell (uncooked)

1 c. sugar
1/4 c. butter, melted extract
3 eggs, slightly beaten
3/4 c. light corn syrup
1/4 tsp. salt





Cream sugar and butter. Add eggs, syrup, salt, bourbon, and vanilla. Mix until
blended. Spread pecans and chocolate chips in bottom of pie shell. Pour filling into shell. Bake in a 375° oven 35 - 40 minutes. Yield: 6 to 8 servings

Note: Jay had many favorite recipes. From an early age, he appreciated good food. Some of his favorites were: pork chops, broccoli, and squash. He couldn't understand at age 5 and 6 why his friends didn't like vegetables. I think he still wants his mom to prepare his favorite pie. This Thanksgiving was the first time I did since he took his wings.
