VICTOR'S CHEESY HASH & SPINACH PIE

1/4 c. flour
1 T. horseradish
1 tsp. mustard
1 c. grated sharp cheese
2 T. chopped pimento

 

1/3 c. tomato paste
1 (2-oz.) can mushrooms
1 c. shredded cheddar cheese
grated cheese added on top
1 single pie crust
1 (15-oz.) can corned beef hash
2 (10-oz.) chopped spinach
2 beaten eggs
1 (10 3/4-oz.) can cream of mushroom


 

Prick bottom of single pie crust and bake at 450° for 10 -12 min and set aside to cool. Cookl the chopped spinach and drain well. Set aside. Mix eggs, soup, flour, horseradish and mustard together. Add drained spinach and mix in. Spread the corned beef hash over the bottom of the pie crust. Spoon the spinach mixture over the top of the hash. Bake for 45 minutes at 350°. Combine grated cheese and pimento bits and top pie. Bake for 2-3 minutes longer. Let stand 5 minutes and then serve.

WALTER'S MEAT-ZA PIE

1 lb. ground beef
2/3 c. evaporated milk
1/2 c. bread crumbs
1 tsp. salt
add a little garlic salt to taste

 

 


Brown hamburger, drain. Add remaining ingredients and mix well. Place mixture in large ungreased pie dish and top with grated cheese. Pre-heat oven for 25 minutes at 500° F. Reduce heat. Place dish on center oven rack and bake for 40 minutes at 400 °F. Serves 4-5 people.

People have different ways of eating it. We would put potatoes in the center of our plate, add the mixture on top. Add soy sauce to taste, then mix it all in together. One huge heaping mess on our plates that tasted ohhhh so good. Voila….Great Grandma's Americanized Chop Suey.

Note: For years and years Shawn’s grandfather made his chop suey. He’d always say oh just a little concoction I whipped up. At Shawn's great-grandmother's 90th birthday party it came out that it had been HER concoction. We laughed about that for months. She taught her son to make it. I taught mine. With respect and love in memory of Shawn J. Bannon and Karla (Siedenburg) Dietz.

SHERRY'S SLOPPY JOES FOR BRIAN
 

1 dash pepper
3/4 c. ketchup
1 c. water
2 tsp. Worcestershire sauce
1 lb. ground beef
2/3 c. onion, chopped
2 T. flour
1/2 tsp. salt




Brown ground beef and onions on top of stove. Blend in flour, salt and pepper. Then, add ketchup, water and Worcestershire sauce. Mix well. Cook on medium heat, stirring until thickened. Simmer 10 minutes.
