DAVID'S SCALLOPED POTATOES AND HAM
1/2 c. flour
1 pt. milk
salt and pepper to taste
5 lbs. potatoes
2-lb. ham
1 box Velveeta cheese
1 stick butter
Preheat oven to 350°. Peel and slice potatoes place in large baking pan. Cut
ham in cubes, place with potatoes in baking pan. In sauce pan on medium
heat, melt butter and add flour until creamy. Add milk, cube up cheese and
add to milk. Heat until cheese is melted and you have a nice cheese sauce.
Pour over the potatoes and ham. Bake in oven for 40 minutes or until golden
brown on top. Cool and serve.

DAVE'S TRIPE
salt to taste
2-3 c. meat sauce or tomato sauce
grated Parmigiana or Romano cheese, or a mixture of the two
If you haven't bought the tripe already boiled, wash it very well, then cut
it into fairly large pieces and boil it in a big pot with the carrot,
celery, onion, and salt. Skim the surface often and simmer for 4-5 hours,
adding water if need be. Once the tripe is cooked drain it well and cut it
into the traditional thin strips. While the tripe was cooking you will have
prepared the meat or tomato sauce (you'll want 2-3 cups). Simmer the tripe
in the meat/tomato sauce for a half hour more, then dust it well with grated
cheese, and serve steaming hot. I'm not sure about the number of people this
serves. If it was for Dave, it would just serve one person! But, I think it
will serve at least 2 or 3.
Note: I don't have a name for this recipe - but I know it was Dave's
very favorite. My mom used to make it and when Dave was older he used to
scout it out in local Italian restaurants. For lack of a better name I'll
call it Dave's Tripe.
